Valentina's Pasta alla Norma


Clarissa, follow each of these steps EXACTLY.
This is the Baron’s favorite meal and it must be perfect.

Pasta alla Norma

Ingredients:
Rigatoni
Tomatoes
1, 2 Eggplants
Basil
2 Cloves of garlic
Ricotta salata

For the pasta sauce, crush the garlic cloves in a bit of oil, and after a couple of minutes, add the tomatoes. Let it cook for 10 to 15 minutes.

Cut the eggplants into slices, salt them a little and put a weight on them for about half an hour so they release their bitter water. Dry them well and fry them in oil.

Cook the pasta, and when you're about to drain it, save a small cup of the cooking water and add it to the sauce.

Pour the pasta into the sauce and add the basil and the eggplants.

When you plate it, grate some ricotta salata on top and add a bit more basil.
